Scrambled eggs with goat cheese & charred tomato. 

Rainy day comfort food! If you love goat cheese as much as I do & looking for ideas how to have gourmet style yummy b’fast for yourself or impress friends/guest then try this super easy recipe!! 

Ingredients

1 tbsp olive oil

1 pint grape tomatoes – dash of balsamic vinegar while charring. 

1 clove garlic, sliced

6 eggs

3 tbsps heavy cream

salt and pepper

1 tbsp butter

2 ounces soft goat cheese

fresh herbs (thyme, basil, oregano, or parsley would all be great choices)
Instructions

In a heavy skillet (I used a cast iron skillet), heat the oil over high heat. Add the tomatoes to the pan with a dash of balsamic vinegar and cook for 2 minutes without stirring. Stir them around and add the garlic to the pan. Continue cooking for another 2 minutes, stirring often. Remove the tomatoes and garlic from the pan and set aside. 

In a medium bowl, whisk together the eggs, cream and a sprinkle of salt and pepper. Melt the butter in medium skillet over medium heat. Add eggs to the pan. Use a spatula or wooden spoon to fold the eggs over themselves as they start to set. Cook until desired doneness. Stir the goat cheese into the hot eggs.

Transfer the eggs to a bowl, top with the blistered tomatoes. and garnish with fresh herbs. Serve immediately.
