Cauliflower Frittets – 4 ingredients only! 

Rainy weather calls for fried & super yummy food. I made this super easy 4 ingredients healthy ( kinda) fritter recipe. Oh well… who wants to slave all day in kitchen🤔

 

 

 

2 1/2 cups grated cauliflower, packed / use potatoes instead

2 eggs

1/4 cup +2 tbsp.gluten free breadcrumb (or almond meal or oat flour if low carb)

1 tbsp fresh cilantro chopped

1/4 tsp salt

Pinch of chilli flakes – if desired

3 tbsp canola oil to fry

Instructions
Cut the florets of one small cauliflower head.

Place the florets into a food processor with the S blade attachment.

Process until it forms a thin cauliflower rice.

Measure 2 1/2 cups of packed grated cauliflower and place into a large mixing bowl.

Add eggs, almond meal or oat flour, fresh herbs, salt and chilli if you like.

Combine with a spatula until it forms a fritter batter.

Use your hands to shape small fritters – you should makes about 16 fritters with this recipe. The smaller and thiner they are the faster it will fry. Make sure you squeeze the batter very well into your hands to first form a ball.

Place the cauliflower ball onto a plate covered with parchment paper and flatten with your hand – about half cm thick, 5 cm diameter.

In a frying pan , warm the oil under medium heat.

When the oil is very hot add the cauliflower fritters and cook for at least 5 minutes on one side before flipping them on the other side.

Fry 3 more minutes on the other sides and remove them from the pan when perfectly fried.

Cool down on a plate covered with absorbent paper to remove the excess of oil.

Repeat until all the fritters are cooked. You may have to adjust the oil level for the following fritter adding 1-2 tbsp of canola oil.

Serve hot with mashed avocado or as a vegetarian sandwich filling.

Sandwich : Smoked salmon & cucumber sandwich with veggie option 

A chic touch to a everyday sandwich! I recently went to a hi-tea party & ohhhh yeah their were platters of sandwich which looked scrumptious but very plain on top to look at.. I kept on thinking how to make it prettier & here is my take! Do try it. I used cream cheese as a glue for thinly sliced cucumbers 👀

INGREDIENTS

115g hot smoked salmon, flaked

25g red (Spanish) onion, very finely chopped

2 tablespoons Goat cheese 

1/2 tablespoon Mayo – optional 

1 tablespoon lemon juice

salt & cracked pepper

2 Lebanese cucumbers (or small thin cucumbers), washed

6 slices fresh white bread

30g spreadable Cream Cheese

INSTRUCTIONS

Note: Make sure that your cream cheese is at a consistency that will spread over the fresh bread without tearing. It is best to take it out of the fridge for 10 minutes before use.

In a medium bowl mix smoked salmon, red onion, goat cheese  and lemon juice until combined. Add salt and pepper to taste.

Using a vegetable peeler slice long thin strips lengthwise from the cucumbers. It is best to avoid using the core of the cucumber, which holds all the seeds. Pat cucumber strips dry with some paper towel.

Spread cream cheese over a slice of bread. Lay the cucumber strips over the cream cheese, making sure they over lap slightly. Pat them down gently and turn the slice of bread over. The cucumber side becomes the outside of your sandwich.

Repeat this step with the remaining five slices of bread.

Spread one slice of bread, on the non cucumber side, with the salmon filling. Then place another slice of bread, cucumber facing up, on top of the salmon.

Gently cut off the crusts and cut sandwiches into triangle quarters. Repeat with the remainder of bread and salmon. You will end up with 12 triangle sandwiches.

You could also cut them in to fingers. Cut off the crusts as above, and then cut in to three even finger portions, you will end up with nine sandwiches this way.
